Ingredients:
For the Biscuits:
- 2 cups All-Purpose Flour
- 1 Tbsp Baking Powder
- 1 1/2 tsp Salt
- 3 Tbsp Sugar
- 1 Stick Unsalted Butter (VERY cold)
- 3/4 cup Buttermilk (adjust as needed)
- 1 cup Frozen Blueberries
- 1/2 Stick Melted Salted Butter
For the Sauce:
- 1 cup Powdered Sugar
- 3 Tbsp Milk (adjust as needed)
- 1/2 tsp Vanilla Extract
Directions:
- Prepare the Butter:
- Cut the butter into small pats and lay them out on a cookie sheet lined with wax paper. Freeze for at least 10 minutes. This keeps the butter cold, which is key to achieving a flaky texture.
- Prepare the Skillet:
- Lightly grease a cast iron skillet with a small amount of bacon grease if available. Alternatively, a tiny amount of vegetable oil will work. Preheat your oven to 500°F (260°C).
- Make the Sauce:
- In a small bowl, stir together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk as needed to achieve a pourable consistency. Set aside.
- Combine Dry Ingredients:
- In a large bowl, mix together the flour, baking powder, salt, and sugar.
- Cut in the Butter:
- Add the very cold butter to the dry ingredients. Cut it in using a pastry cutter or your fingers until the butter is about the size of peas and is well mixed in.
- Add Buttermilk:
- Gradually add the buttermilk, stirring until the dough just comes together. The dough should be slightly wet but not sticky.
- Prepare the Dough:
- Turn the dough out onto a well-floured surface. Sprinkle some flour over the dough. Gently press the dough to about 1/2 inch thickness. Distribute the frozen blueberries evenly over the dough. Knead the dough a couple of times to incorporate the blueberries, then flatten it back out to about 1 inch thickness. The blueberries will release some juice and create flecks of blue in the dough.
- Cut and Arrange Biscuits:
- Cut the dough into biscuits using a round cutter or a glass. Place the biscuits in the prepared cast iron skillet, making sure they are touching each other for soft sides.
- Bake:
- Bake the biscuits at 500°F (260°C) for 10-12 minutes, or until golden brown. Around the 6 to 8-minute mark, take the skillet out of the oven and brush the tops of the biscuits with melted salted butter. This adds flavor and helps achieve a golden, crispy top.
- Glaze and Serve:
- Once baked, let the biscuits cool slightly. Drizzle or brush the prepared glaze over the warm biscuits. Serve immediately for the best texture and flavor.
Tips for Success:
- Cold Butter: Keeping the butter cold ensures that it stays in small pieces throughout the dough, which helps create a flaky texture.
- Don’t Overwork the Dough: Mix and knead the dough just enough to combine the ingredients. Overworking can result in dense biscuits.
- Thicker is Better: For fluffier biscuits, roll or press the dough to a thickness of about 1 inch.
Enjoy these Sweet Blueberry Biscuits fresh from the oven, drizzled with a sweet glaze, and paired with your favorite breakfast beverages!
