Smash Burger Pancakes

Ingredients:

  • 1 egg, separated
  • 75g plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon caster sugar
  • 100ml milk
  • 1 tablespoon neutral-tasting oil
  • 250g 15% fat beef mince
  • 2 slices American cheese or mild cheddar
  • 30ml burger sauce
  • 40g sliced gherkins

Method:

  1. Prepare the Pancake Batter:
  • In a clean bowl, beat the egg white with an electric whisk until soft peaks form.
  • In another bowl, mix the egg yolk with the plain flour, baking powder, and caster sugar. Gradually whisk in the milk until you have a smooth paste.
  • Gently fold the whipped egg white into the yolk mixture. This will give the pancakes a light and airy texture.
  1. Cook the Pancakes:
  • Heat half of the neutral oil in a non-stick pan over medium heat.
  • Spoon a quarter of the pancake batter into the pan, spreading it into a small circle. Cook for 2-3 minutes on each side, or until the edges are set and golden brown. Repeat with the remaining batter to make a total of four pancakes, keeping them warm in a low oven.

  • In the same pan, heat the remaining oil over high heat.

  • Place a slice of cheese on each patty and cook for another 1-2 minutes, or until the cheese is melted and the patty is cooked through. Repeat with the second ball of mince.

  • Start with a pancake as the base. Layer on a cheesy beef patty, followed by a generous spread of burger sauce and some sliced gherkins.
  • Top with another pancake to complete the stack. Repeat for the second burger.
